What you’ll need:
2 lbs fresh PEI mussels, scrubbed and debearded
2 tbsp butter or olive oil
2 shallots, finely chopped
3 cloves garlic, minced
1 cup L’Acadie Blanc (or dry white wine)
½ cup chopped parsley or tarragon
Crusty bread, for dipping
How to make it:
In a large pot, melt the butter over medium heat. Add the shallots and garlic, and sauté until they are soft and fragrant.
Pour in the wine and bring to a gentle boil.
Toss in the mussels, cover, and steam for 5–7 minutes, shaking the pot once or twice, until the mussels open.
Discard any that don’t open.
Sprinkle with fresh herbs and serve with warm bread to soak up the broth. 🥖💧
